A Lite Healthy Appetizer Won Ton Chicken Bites.

Here is a recipe that we have served at chamber events and the home parties we do. We have gotten rave reviews from many of our customers. Chef Russ is sharing this recipe with you.

Won Ton Chicken Bites

Won Ton wrappers are great for the spur-of-the-moment entertaining.Once found in asian markets ,these inexpensive wrappers ( about $2 for 48 ) have gone mainstream and can be found in most supermarkets, refrigerated, usually in the produce section. Won Ton wrappers are traditionally used to prepare steamed, fried,and boiled chinese dumplings. In this recipe, they are baked into small , attractive pastry cups with a slight nutlike flavor in just 8 minutes.

This chinese chicken salad is made with ingredients easily found in a traditional supermarket and only requires simple knive skills of chopping and slicing. The chicken can be skinless, boneless breast that has been oven baked or cooked on the stovetop in a saucepan of water. Or, the next time you get roasted chicken from the deli, save a little and use that to add more depth to the overall flavor.

The cups are quite strudy and travel well , unstuffed in a plastic bag. They can be stored up to 3 days with out loss of crispness or flavor. Most salads have a bit of moisture so , to prevent the cups from getting soggy, fill the cups just before needed. They should be able to sit filled for a couple of hours before starting to get soft, especially the bottoms.

Ingredients
36 won ton wrappers ( mini muffin tin )
8 oz coleslaw ( diced or shredded)
1 cup cooked , chopped chicken
1 can ( 8 ounces ) sliced water chestnuts, drained finely chopped
5 green onions thinly sliced, both green and white parts.
1 tablespoon roasted ( dark ) sesame oil
8 tablespoons ( 1/2 cup ) chinese plum sauce

1. Heat oven to 350 F. Wrappers are a little too big so cut a 1/2 ” strip from one of the sides and 1/2 ‘ from the top and bottom, keeping a square shape. Oil the muffin tin and center wrapper over the hole. Press wrapper down carefully with fingers. ( a wooden tart- tamper from the Pampered Chef works great) and form a flat bottom- the sides will form multiple pleats and look like a small flower. Bake until golden, about 8 minutes. Let stand in tin at least 5 minutes, and then remove to cooling rack.

2. Place coleslaw, chicken, water chestnuts, and green onions in a large bowl. Add sesame oil and then plum sauce. Stir to mix ingredients together. Spoon into cooled won ton cups and enjoy!
